Opera singer, actress, cookbook author and TV cookery show personality Silvia Colloca joined us to chat about all-things Italian food.

But, it was one Italian meal that really sparked our interest – Carbonara!

“We don’t abuse cream in Italian food,” she told Jonesy & Amanda.

“We don’t put cream in Carbonara… it’s all about timing!” she added, focusing on the four ingredients required for the dish.

There’s no denying that her friends and family – particularly her husband Richard Roxburgh – absolutely devour this dish.
