You never really know when genius will strike so when inspiration hit at Banksia Bakehouse, they rolled with it.

They’ve invented some sort of modern art piece, a cube… made of croissant… but it’s also a lamington?

Don’t think too hard about it, just know it looks gorgeous.

The flaky croissant cube is filled with dark chocolate coconut ganache and strawberry rose jam and the entire cube is coated in dark chocolate and desiccated coconut.

The strawberry jam is from an artisanal cannery in Dulwich Hill called the Drunken Sailor, so you KNOW it’s going to blow your mind.


The lamington croissant is available from Banksia Bakehouse Monday-Friday, Grosvenor Place, 255 George Street, Sydney.
