Classic Sydney Milkbar Reborn As A Small Bar
After famously operating as a milkbar for over 63 years, The Rio at Summer Hill has now re-opened... as a bar!
George Poulos served his legendary milk shakes at the Smith Street address until he passed away in 2015, but now the classic store has been given a new lease of life after it's new owners started serving drinks.
Tess Robens told Goodfood.com she wants to pay tribute to the venue's history by restoring the buildings fascade and also selling a drink inspired by The Rio's past.
"I grew up in Summer Hill and the caramel malt milkshake at The Rio was my favourite. We've put a bootleggers punch on the menu as a nod. Apparently milkbars used to put a dash of rum in the bootlegger milkshakes,"
"I want to honour George by creating a space that is a meeting place for the community. I've wanted to have a bar in this space for as long as I can remember," she says.
Open Wed-Thu 3pm-10pm
